Herby Hemp Seed Pesto
Anastacia’s Herby Hemp Seed Pesto – DF/GF
Ingredients:
½ cup hemp seeds
1-3 garlic clove (depending on your taste)
2 cups chopped greens (kale, spinach, coriander, parsley or basil – anything you like!)
1/2 cup nutritional yeast
Juice of 1 lemon or 2 limes or 4 tab of apple cider vinegar
¼ cup extra-virgin olive oil
sea salt and freshly ground pepper
Method
1. Pulse the hemp seeds and garlic in a food processor.
2. Add the kale and pulse again.
3. Add the lemon juice and a few generous pinches of salt and pepper and pulse again.
4. While the blade is running, drizzle in the olive oil. Scrape the sides of the food processor if necessary, and pulse again. Season to taste.
5. Serve with seed crackers, on a bagel/bread, use in salad dressings or as a sauce for pasta salads.
Optional variations:
- Add 1 x avocado for a creamy/whipped dip version
- Add a drop of honey or maple syrup to sweeten the mix (takes the bitter edge of kale is you use this on it own).
- ¼ tsp dijon mustard for more of a kick !
- 1 small chill or 1 tsp of hot sauce for a bit of heat
